What is a good oil to use for the MT250's oil injection system that it currently available?

Bel-Ray Si-7 is an excellent 2t injector lube. Unfortunately, the MT injection system tends to significantly over-oil the engine, so you may want to adjust the oil-pump cable down a bit, run a hotter plug, etc.

You mentioned to "...adjust the oil-pump cable down a bit..." I'm assuming you mean to loosen the cable at the oil pump and put a little more slack in the cable, correct? Any way to quantify or all trial and error?

Back in the day I seem to remember just jumping on mine, firing it up and away I went with a strong, smooth pull through the power band. Hoping to get this one running that way too.

Yes. Both the bikes I worked on would surely still be over-oiled even with enough cable slack to keep the idle oil output up to @ 3,000 rpm. Pump output is dependent on both cable position and rpm.

Absolutely - disconnect the oil feed at the intake manifold and run it into a small plastic bag, plug the manifold hole, and run premix. You'll likely find the bike runs noticeably crisper, and you'll have a very good idea of pump output.
