I need to change the tranny oil in my son's 99 YZ125. What oil do you recommend, and what is the proper amount?

I know this isn't considered "vintage", but this is the most informed forum I've seen.

I use Maxima Tranny oil.

There's an oil level check bolt right in the side of your cases (On Hondas, it's a combination hex/phillips head bolt on the right side). Remove the bolt, then with the bike level, fill the tranny until oil starts to drip out of the bolt hole. Replace the bolt. Your done.
