I think it depends on how much of the CR chassis remains, and how close to a CR you want the finished product to be. You should be able to use certain MT parts to get the CR running again, especially if you're willing to cut, weld, grind, etc.
The tank should fit OK, but the MT seat is hinged and surely won't bolt on.
Everything ahead of the steering stem is "interchangeable" on both bikes, although most of the part numbers and specifics are different. The rear wheels should also swap out OK, but obviously are not identical. Most motor parts are different, but will interchange.
I've read here and there on the Web that the MT125 and CR125M are "practically the same bike", but after three years of trying to find parts for my CR, I've found that's just not true.
