Yes, that will work. Practically any 2-wire on/off switch with the proper end terminals / cable length / bar diameter should work fine.

I can't believe it's been a year since I first asked this question. I need to make this bike a priority since it has been taking up space in my shop for 4 years now.

So I got a kill switch finally, but not sure how to hook it up. There are two wires coming out of the stator; a yellow one, and a black with white stripe. The yellow one was clipped after about an inch out of the cover, so it goes nowhere and does nothing. The black/white one goes up to the coil. It has been spliced by the tank, and the splice has about 3 inches that go nowhere. I did have it running very briefly when I first got it, so I know the coil is functional. But how do I hook up this switch?

The black/white 3" coil-wire splice almost certainly went to the OEM kill switch before it was clipped off, so I'd connect the black/white kill switch wire to it, with the green switch wire going to chassis ground at the coil mounting bolt (I'd crimp a ring terminal to the green wire first, then run the bolt through that).

The yellow wire is from the stator lighting coil, and was originally connected to the yellow wire of the headlight switch.
